I love to watch these, but I would never do that to a knife I paid for.

It's an acquired skill that takes some time to get correct. My first 300 sharpening sessions were a learning experience. :D

I finally found the perfect combination, at least for me.
The Work Sharp (http://www.worksharptools.com/?gclid=CKSZo62SlMACFWho7Aod5nwACA) will put a very nice edge on a knife. It's all I use on my kitchen knives.
For my carry or hunting knives, I follow up with a Spyderco Sharpmaker (http://www.spyderco.com/catalog/details.php?product=77) to get an edge you can actually shave with.
The learning curve for both of these is very short.
